Swedish Aquavit known as Regnig Dag (a.k.a. "rainy day") is made by distilling caraway, star anise, and coriander seed and then aging it in used wine barrels from Oregon for 6 months, just long enough for the spirit to soften, take up some mild wine aromas, and turn a gorgeous golden color.
